Simple Veggie Chili

Happy, Healthy New Year! As we all start our new year with the best of intentions to eat as healthy as we can, it seems time is such a factor. Quite often my clients tell me they don’t have time to cook. I am by no means a professional cook, but I have created many homemade meals with just some basic ingredients. I will continue to share these recipes with you as they are easy to make, nutritious, and family approved. This Simple Veggie Chili recipe will make enough to eat some and freeze some. This is where the time factor comes in. I love the motto cook once and eat twice (or 3 or 4 times). Batch cooking will save you time, money, and more importantly you will have a healthy, homemade meal to go home to! There is no wrong/right way with this recipe. You can choose to add in whatever veggies you have available. The more the veggier!

 

Ingredients:

  • Black beans – 1 pound bag dried or 3-4 cans
  • Sweet potatoes – 3 large
  • Red onion – 1 large
  • Coconut milk – 1 can (my favorite is Native Forest)
  • Chopped Tomatoes w/juice (I used 26 ounce carton of Pomi)
  • Fresh Mushrooms – 20oz (combination of white/brown)
  • Olive oil
  • Ginger 2 tsp (I used Ginger People brand)
  • Fresh garlic 3-4 large cloves
  • Seasonings to taste: Sea salt, black pepper, cayenne pepper, curry powder (I used 1 tsp.)

 

Directions:

Sort and soak dried beans overnight and cook (I love the Instant Pot – cooks beans in 30 minutes!) OR rinse/drain canned black beans. Wash and chop mushrooms and sweet potatoes (skin on).

Peel and Chop onions and garlic, saute in olive oil, add ginger. Add in remaining vegetables, coconut milk, and spices. Cook on medium heat until vegetables are tender (about 30-45 minutes).
