Gluten-Free Amaranth Waffles
This recipe is one of the easiest for making morning waffles. They are kid-tested and approved which is a twin-win in my book! My seven year old twins loved them! Pure maple syrup sweetens these waffles from the inside. Top with almond butter or plain Greek yogurt for added protein. For additional sweetness add fresh fruit (bananas or strawberries pair well). Enjoy!
- 2 cups Amaranth flour
4 tablespoons pure maple syrup
2 tsp. baking powder
1/2 tsp. sea salt
1 tsp. cinnamon
4 tablespoons applesauce
6 tablespoons avocado oil
3/4 cup water (or more if necessary)
*Add 1/2 cup ground flax seeds for added fiber (optional)
Combine dry ingredients. Add eggs, applesauce, and avocado oil, stir to combine. Add water until desired consistency. Heat griddle, pour 1/4 cup portions, cook a few minutes on each side until golden brown. Skip store bought waffles and make them at home. #freezeforlater
